Cinco de Mayo

Today is Cinco de Mayo, a festive celebration that celebrates the culture and heritage of Mexican Americans, and the triumph of the Mexicans over the French in the battle of Puebla. To learn more visit Wikipedia

I figure that anything that makes us celebrate and enjoy life is a good thing and should be shared by all, and Cinco de Mayo is no exception to that rule. Today, Cinco de Mayo is celebrated not only in Mexico, but worldwide.

I don't do a lot of Tex-Mex cooking, so I didn't want to post a recipe that might not be good, or might not be the right recipe for the occasion, so I am directing you to some websites with recipes for the Cinco De Mayo celebration:

Holland Sentinel gives a recipe for Roasted Chicken and Veggie Tacos and Chicken Tacos with Pineapple Pico De Gillo

About.com has some recipes that are Gluten free for Cinco de Mayo such as Chiles en Nogada (Chiles in Walnut Sauce), Gluten Free Tacos with Spinach and Avocado, and Black Beans Nacho Grande

Food Network: 50 Recipes for Cinco de Mayo

AllRecipes.com: more great recipes

Enjoy and celebrate!
