For dinner, I was making a Filet Mignon with Béarnaise Sauce (and yes, I am going to cheat and use packaged sauce), and I just wanted a simple meal because we had the appetizers. I thought some mushrooms, asparagus, and some roasted potatoes would round out the meal.
I bought a bag of baby new potatoes in my frantic last minute shopping trip and decided that I would just make them very in a very no muss, no fuss, fashion. A little butter/olive oil, garlic, onions, some spices, and bake.
Here is the recipe:
1 bag (28 ounces) of baby new potatoes (I used Bel Campo)
4 ounces of unsalted butter
2 tablespoonful olive oil
4 cloves of garlic, peeled and crushed
1 large onion, peeled and sliced
Salt, freshly ground pepper, and garlic salt to taste
1 teaspoon each of dried oregano, basil, and parsley
2-3 tablespoonful of grating cheese (whatever kind you prefer)
Peel a narrow strip around each of the new potatoes. Place into a pot of cold water until ready to use. Peel the garlic and crush and set aside. Peel the onion and slice, and set aside. Mix the oregano, basil, and parsley together and set aside. Melt the butter, and add the olive oil to the butter. Add the garlic, garlic salt, salt, and black pepper to taste into the butter/oil mix. Remove the potatoes from the water and place in a large bowl. Add the onions to the potatoes in the bowl. Add the dried spices to the potatoes. Add the grating cheese to the potatoes. Add the butter mixture and toss well. Add a little (very little) water to the bowl and swish around to get out all the mix, and add it to the potatoes. Preheat the oven to 400 degrees F. Spray a roasting pan with PAM. Pour the potatoes into the pan. Bake for about 40 - minutes to an hour (check the potatoes after 2-30 minutes, and if they have given off a lot of water, empty some out so that they will get nicely browned) until golden brown. Spoon into a bowl to serve.
Serves 4-6
Here are the ingredients for the Roasted Baby New Potatoes
Peel a small strip around each potato
Place the potatoes in a pot of cold water
Crush the garlic and set aside
Peel and slice the onion and set it aside
Place the butter in a microwave safe dish
Melt the butter in the microwave
Stir in the olive oil
Add the garlic to the butter
Add the garlic salt
salt
and pepper to the butter/oil mix
Preheat the oven to 400 degrees F
Drain the potatoes and place in a bowl
Add the onions to the potatoes
the spices to the potatoes
Then, add the grating cheese to the potatoes
Add the butter/oil mix to the potatoes
Stir well
Place a little water in the bowl and swish around to get all the seasonings out
Add the water to the potatoes
Spray a roasting pan with PAM
Place the potatoes in the roasting pan
Bake for about 40 minutes to an hour until golden brown. Check after about 25 minutes and if the potatoes have too much water in them, drain some out and return them to the oven.
Place in a serving bowl and enjoy!
