Sauteed Mushrooms Italiano

What's a good steak with some sautéed mushrooms?  Not too good that's for sure.  I wanted to make some mushrooms that I could start earlier in the day and then just reheat before we sat down to eat.  Here is what I came up with.

Sauteed Mushrooms Italiano

2 boxes of sliced mushrooms
4 tablespoons sweet butter
2-3 tablespoons olive oil
4-5 cloves of garlic, peeled and crushed
1 large onion, peeled and diced
Salt and freshly ground black pepper to taste
Garlic salt to taste
1 teaspoon each of dried oregano, parsley, and basil (mix together and set aside)
5-6 Ritz crackers (crushed)
About 2-3 tablespoons of grating cheese (whatever you prefer is fine here)

Peel and crush the garlic and set aside.  Peel and dice the onion and set aside.  Place the Ritz crackers in a sandwich bag, and gently with your fingers, crush them.  Add the grating cheese to the cracker crumbs and set aside.

In a large sauté pan, melt the butter with the olive oil over medium heat.  Add the onions and garlic and sauté until soft and golden.  Add the mushrooms, tothe pan and stir.  Add the salt and pepper, garlic salt, and dried herbs.  If the pan is too dry, add a few more drops of olive oil.  Stir over low heat for about 8-10 minutes, and turn off.  Since you are going to reheat them later, they will cook a little more then.  The mushrooms may turn a tad brown, but they will still be delicious.   Right before serving, toss in the cracker/cheese mixture.  Stir.  Place in a nice serving bowl and enjoy.

Here are the ingredients for the mushrooms:



Crush the garlic, set aside


Peel and dice the onion and set aside


Mix the three herbs together


and set aside



Place the crackers in a bag and gently crush them with your fingers




Add the cheese to the crackers


Mix well

Place the butter and oil in a sauté pan over low-medium heat.  


Add the onions and garlic and sauté until golden

Add the mushrooms


Add the herbs you set aside



Add garlic salt to taste


Add salt if you want to (not very much because you are 
adding garlic salt and grating cheese) 
and freshly ground black pepper to taste


Stir well and cook about 8-10 minutes and turn the gas off.  



Reheat them right before serving or if serving immediately, taste to see if they are done. 


 Add the cracker/cheese mix



and stir well


Pour into a serving bowl, and enjoy with your steak!
